I finished the original not that long ago. And it was a pretty odd game. The story was great, but the RPG gameplay was not really well developed and it was such small part of the overall experience (like 3/4 of it is basically a visual novel). Yes, it's a very good decision for the game. If it's not ready and/or is still lacking then the best thing is to delay it.
No, it's a terrible decision for the Series X/S. Because now the launch lineup for the console is fairly weaker than it was before.

You do realise that it's the same for iOS and Android, right? What Epic did was to intentionally break the rules of both platforms and break the TOS. To incite a response from Google and Apple in order to push their public campaign against them. If they pushed something similar on consoles and the manufactures block the update because of that. That would have the exactly same effect as having the game pulled from the Play Store and iOS.

I would say that there is a chance, after all the same could be said about the CPU market and look where are right now. Plus the reports on Nvidia hardware are not exactly good.

If the more recent news are true is really the opposite. With Nvidia even preparing higher memory versions of the cards to launch close to AMD offering in order to be competitive as the normal variants wouldn't suffice.
Very likely going for the current price of the RTX 2080 Ti and the Titan RTX. Though very few people should actually have a use case for such a monstrosity.
The RTX 3080 and RTX 3070 is where things will get more interesting. As supposedly those are the targets for AMD's Big Navi.

Even though Guerrilla did come a long way since the announcement - as back then they wouldn't even implement a FOV slider. It's not the best showcase for a optimized product or for their engine.
But most likely expected something on that level, giving that we are dealing with console developers.

Why wouldn't it though? Like updating the firmware of controller is rarely necessary, unless there something broken or they are adding support for a new device/feature. But it's not something rare or impressive. Most modern controllers are capable of that. Including really cheap chinese mobile ones.
If they deliver it. The issue with this game is that the developers are formed from the Final Fantasy XV team. A game that while is not bad, was a half-backed released that never got completed. As Square-Enix cancelled the story DLCs.
So the issue is if they are going to managed to deliver a compelling experience. And Square-Enix themselves are also having a hard time with new IPs. Their "new" RPG Factory is yet to pump out a good game and it's already on it...
EA is doing everything to save this game.
They dropped the price to $5 in all stores (minus Steam, because reasons), made a free to play weekend and now are adding it to their subscription services. And of that in just two weeks after launch.
At this point I feel they should just make it free to play.
I think this is the first small game that Epic allowed to be released on their store as well as on Steam.
The cart number 2 looks like the best deal. Games like Chips Challenge and Blue Lightning are actually pretty good.
From the first cart I know about Dracula the Undead and that is only because the game was sort of graphical showcase for the console.
In any case I hope they keep going with more platforms and games.
I have to hand it to Epic Games. Only took them short of two whole years to start implementing the feature. Maybe when they celebrate 2 years of existence they will roll out the feature for every game. And two years from now we might even get a shopping cart!

You should read both lawsuits. The pulling of Fortnite from the stores is not Epic complain. It was only used to make the public perception be positive on them.
