Cost wise you have IMHO done the right thing.
I have an internal 1TB, 7200 rpm HDD in my PS4 (took it out of a failed laptop) and I get approximately 20% better performance than a standard 5400rpm HDD.
An SSD would boost the performance of my PS4 considerably in the loading department but I would end up paying significantly more.

If you insert your XBox360 game that is on the support list into the drive of the XB1 for the first time you will get a download of the recompiled game that is X86_64 compatible and has been tested to your hard drive. It is this recompiled image that you can play.
At no stage can you play an XBox360 game directly from your XB1's hard drive although you do need to put your XB360 DVD into the XB1 drive for authentification.

With the Souls/Borne games, you cannot pause and the only way you can you can be relatively safe is to log out or find an area where you won't get attacked by an enemy. If you are online and certain conditions are met such as being unhollowed then you could be invaded.
All the above is a great turn off for the casual player who prefers the ability to play for a few minutes then pause if interrupted and resume a few minutes later.
Because the PS4 is a fairly small gaming console as is the XB1s, you can easily do "gaming when you get there". Sure the Switch allows you to "game on the go" but most people when traveling find that the Switch is still fairly large and a dedicated gaming portable (eg. 3DS, 2DS, Vita) or even a smartphone (many games are free) is much more convenient.

No, you don't need to die from the first werewolf. The werewolf can be fought and beaten barehanded but it will take a while. You can even run away and get to the first (it is the second lantern if you die) lantern and teleport to the Hunter's Dream where you can enter the workshop.
Anyway, it does not really matter. Like all Souls games, new players are going to die and die a lot so dying early in the game while annoying is telling the new player that this is going...

That was a bit rude downvoting you after you asked a question.
It seems that some people don't realize that to "git gud" the new player has to first play the game and in the case of the Souls/Borne games die a lot. I have only played the alpha release of NioH (still on my to-do list) and even though I have played the Souls games and Bloodborne I did die until I worked out what I was supposed to do.
There is no shame in peaking at a Wiki if you are stuck although I do suggest finding most things yourself.
All souls games try to kill you at the start of the game although it is possible to avoid death. In the case of Bloodborne, you can kill the werewolf at the start of the game with your bare hands (it takes some time) or you can just run away or as most do "die". Not a big deal since it does not matter what happens.

Next, go through the church and turn right (you should go left first and kill those annoying birds) and you can easily find a shortcut back to the church (take note of some gates before you open up the shortcut (go back to the lantern if you wish).

As for "gaming on the go", the game (applies to all Souls/Borne games) itself does not have a means of pausing. Sure you can bring up the menu but the game is still running and any attack you get from an enemy will occur in real time.
If you are online then you can be attacked by anyone (ie PvP) after you leave the undead asylum at any time if you are un-hollowed although you do get a warning, however, this won't help you if you are distracted by real-life oc...

I do agree that is up to the parents or guardians to decide what video games are suitable for the children under their care. Personally, I would rather a "kid" (many are in their late teens and older) act out any mindless violence in a video game than actually do the same in real life.
