The i7 5820K is a 6 core processor for those that don't know with 6 cores which in turn translates to 12 threads. There is a more powerful version with 8 cores (i7-5960X) but you are going to pay for it.

The PS4 can play 4k content however the BluRay drive can't support three layer BluRays which would be used to provide 4K content. It will support 4k files such as photos and movies.

As far as The Witcher 3 and Uncharted the cut-scenes are fairly minimal anyway. Even games like the Souls series and Blookdborne have cut-scenes however they are also fairly minimal and in the event you die, which is nothing unusual you don't see that cut-scene again.
I do agree the Souls series and Bloodborne are definitely old school in that there is no pausing although you can save anywhere in the game but if you die it's back to the last bonfire/lantern for you minus your souls or blood echo's.
I do agree that was IMHO was one of the best of the Castlevania series. That upside down castle was interesting.

I would not classify Halo (FPS), Red dead Redemption (Action/Adventure) and Uncharted (Action/Adventure) as RPG's although I do agree with the others you mentioned.
Personally I liked The Secret of Manna and Seiken Densetsu 3 (DeJap version) over Chrono Trigger but it was still a good game.

My first Zelda was Zelda 1 on the NES which IMHO was excellent value for money since it was basically two games in one. Actually your house would often be attacked, however you would only be attacked when you were there to defend it.
Likewise if you had the Dawnguard DLC it was possible that some of the NPC's would be attacked and/or tuned by vampires only if you were in town. Basically if you could not defend some of the NPC's then you may end up with most of the shops being shut-down.
The only DLC I really liked was Dragonborn since you had a large island to explore...

If you have an XB1 and a PS4 and only subscribe to XBox Live then that's fine. Having two or more on-line services can be a waste of money, however it's basically your call not anyone else's.
Personalty I classify any game that I like as a AAA game and others that I don't like as rubbish. I am quite sure the majority of people here are like that as well.
Normally if there is a game that I like I will buy it providing my to do list is not queued up which it is at the moment.
Even if I am not that keen on the PS+ game offerings I sometimes give them a go and on occasion may actually enjoy the game. If I did not enjoy the game I have not lost any...

Still I got PS+ for games with an on-line component (ie. Bloodborne and eventually Dark Soules 2 and 3)) and the free games, whether I like them or not are a bonus.

Actually the PS3 will be 10 years old come November this year. The Cell processor is still a very powerful processor however the memory is relatively small compared to today's average sizes.
