Why is that a problem?
If you are going to get good at anything then you have to start at the bottom and work your way up. Basically the Souls series and Bloodborne are an equal playing field. Yes some take to these games easily while others have to work at it a bit like life in general.
Ok sounds fine until you realise that the Souls series and Bloodborne have an on-line component.
Put an easy mode into DS or Bloodborne and you would have to take out the on-line component since it would be like giving the wolf the keys to the hen house, so even though the game may be easy the PvP won't and somehow I do think we will hear plenty of winging about that.
What next press "X" to skip a boss battle because the "poor" player ...
If you are someone who prefers easy games then that is fine, so then you have to realise that games made by From Software are not for you and get games that you can play.
For instance if you play The Witcher 3 on easy then that is fine however you really can't appreciate the overall mechanics of the game until you play on the harder difficulties. In Bloodborne you adopt a much more aggressive attitude than in the Souls series where you can use a shield.
You can get a shield in Bloodborne although I personally don't recommend it.
If I remember rightly you are given the choice of a Cleaver, Axe or a Whip/Cane when you first enter Hunters's Dream.

I was quite surprised and delighted a few years ago when I showed Dark Souls to my then eight year old niece.
When I let her play from scratch she actually got to the second fire in the castle after you exit the undead asylum before her character died. She actually enjoyed the game and had a pretty good idea on how to change her character's attributes and pick the type of weapons that fitted into her game-play.

Well it took me over thirty tries before I finally beat Father Gascoigne although I did mange to take out Vicar Amelia on the second try, the Witches on the fifth try and the Blood-Starved Beast on the first try. There is something to be said for levelling up and buffing your weapons.
Of course there is nothing worse than getting over confident or rushing. Basically think before you act but don't wait to long.
I have played the King's Field games, Eternal Ring as well as the Souls series and Bloodborne and From Software has never given an initial difficulty setting for any of those games and IMHO they are just so much better for this.
All of the games I have mentioned take over 30 plus hours to play (speed runs exempted) and were never designed for casual gamers unless they are willing to allocate their time to play the game.
If you want to make any of the Souls and Bloodborne game easier then you could always level up, buff or replace your weapons and armour. As you have mentioned you can always summon help.
Of course if you are on-line you may attract PvP from more experienced players, but that is the chance you take. In fact even if the games had an easy mode what is stopping seasoned players from playing that just to PvP newbies? Oh the humanity! 😉
Ok I am going to try to answer this in a reasonable way.
The Souls series and Bloodborne all have an on-line component. Do you honestly think that if you had an easy difficulty that players who are quite competent in playing the harder difficulties to slaughter other players in PvP?

Actually the Souls series and Bloodborne are set to "easy" difficulty, it is only until after you beat the game that you are given the chance to play the game on harder difficulties. :-)
Since my crystal ball is in the shop I can't make any accurate predictions, however I do think it would be reasonable to say that the PSVR will sell from October to the end of December between 2% and 10 % of its possible user base which is approximately 40 plus million.

There are lots of games I choose not to play, not because I am not good enough but because I am not that interested in them. It just so happens I do like the games made by From Software mainly because they interesting to me and present a challenge. These games are not for the casual player since they do take a long time to complete and that is not taking into account the challenge.

The mere fact of being able to change the game's difficulty (especially on the fly) spoils the essence of the game because human nature dictates that most will take the path of least resistance.

I know the feeling. I was playing Bloodborne last night and was getting tired so instead of calling it a night I pushed on ahead too quickly and paid the price. The enemies that would have been relatively easy surrounded me and well you know the rest.
Was I annoyed? Not really, I learnt the hard way, don't play when you are tired, not paying attention or impatient. Tomorrow is another day.

The Souls games and Bloodborne are Action RPG's and as such take in the order of 40 plus hours to play. In addition there is crafting and for armour and weapons as well as different magic's.
There is also the fact that these games have an optional on-line component where you can request help and even get invaded.

I have played Kings Field one and four and IMHO thay are really good games. From what I understand the first Kings Field was panned by people who expected to use a sword like Link does in the Zelda series.
I think some people were put off by the game being first person perspective and you had to have the right stats to be able to use heavier weapons otherwise you may not even hit the enemy leaving you wide open for a counter attack.

I am avoiding DS3 for now mainly because I am still having a ball playing Bloodborne and I still have a fair way to go in the game, especially since I refuse to look at any walk-through's.

There you go Bloodborne is not for you since you weren't willing to persevere. Getting killed by Father Gascoigne is really just an introduction of how difficult this game is going to be.
Actually other bosses are normally not as difficult as Father Gascoigne was, relative to your level.

Well if they don't have the time then they won't be able to play an easy game if that game normally takes over 40 plus hours since the Souls and Bloodborne games are RPG's which includes crafting as well as weapon and protection management.

1) Get better and learn from your mistakes.
2) Give up and play something easier.
Maybe you should be really asking the question and answering honestly. "Why do I play video games in the first place?".
