Considering most FF games are standalone titles, I don't think the entry point matters all that much to be honest. The only thing newcomers need to understand is that the franchise has gone through some significant changes over time. Liking or disliking one doesn't necessarily mean that will apply to the rest of the franchise.

I'll be getting both, but I'm certainly more hyped for VII Rebirth. That's probably just because VII already is one of my favorites and Rebirth will be a sequel to Remake which was awesome. For me it's easier to get excited about continuing the journey.

That's what happens when you devalue the medium with subscription services and overwhelm people with choices by giving them access to games they'd never choose to play if they had to buy them. Combine that with the general deterioration of attention spans through social media and give those same people a way to quickly jump from one game to the next. So one bad practice excuses another bad practice? How about demanding better QA instead? If a game launches with severe issues or lacking features I refuse to pay full price for it. If data collection is required to get a game into an acceptable state you're basically paying for a beta.
To each their own. I've never really understood why people wanted a remake in the first place. The original is a masterpiece and it is still perfectly playable and enjoyable in my opinion.
When FF7 Remake came out it completely blew my mind. A 1:1 remake would've felt like just another playthrough of the game I already know. This felt new and exciting and brought me back to the way I felt when I first played the original.

The legal argument doesn't really matter in practical terms. For all intents and purposes I do own my physical copies of games I've had since I was a kid.
