Yeah, the climbing stuff seems Assassin's Creed level bad sometimes. You're at a stop where there's clearly another spot right above you or you're at the top and she won't pull herself up but just refuses to reach up and grab it so you have to go a different route for no reason.
Being legit stuck though, I never couldn't unstick myself the few times it happened.

I wonder if this is related to the Arena. I was shocked seeing leaderboard times of people completing the tough ones in seconds and I was struggling to finish in time.

LOL. The inventory for the used cars and Legendary cars is always changing. Used cars become sold out and there's only 5 out of, I think 60, of the legendary cars you can buy at any time. One car drops off and they add a new one when it updates. You most certainly cannot every car easily within a few weeks.
And if you're talking about the money thing, it's going to take a hell of a lot longer than a few weeks of grinding. Setting...
And set some realistic prices. There's no reason a nitrous kit should be 100k Cr.
I sure as hell wasn't having any fun not even being able to play. But whatever. Let's pretend there aren't other serious issues like the lack of content once you're done with the café menus. That's partly why people resort to grinding because there's nothing left for them to do but work on obtaining cars.

No it isn't. The only times that really matter are when you're in Sport mode which is something you sign up for separately when you try to launch that mode. No one cares what your lap time was in a single player race or series. I don't even think it is logged to your save. Even if it did, there's zero reason to lock out things like the livery editor or being able to purchase cars and parts. If the integrity of the times is so important for single play...
Having a working internet means nothing when the servers are down.
That worked out so well for Gran Turismo.
And let's not forget that you can't even sell cars, you can only discard them. What part of real world are they trying to replicate by only allowing us to discard cars rather than selling them?
Then having the nerve to have a trophy for buying the same car 10 times.
Edit: also, reflecting real world prices? Who sells nitrous kits for $100k?
I don't think the rolling starts is really the issue. Many racing series use rolling starts. The bigger issue is how far apart everyone is and always starting from the back. I'd much rather have more close racing than being a chase, like you said.
They don't need to verify my lap times in the single player campaign. It's not like lap times in a race are going to count for anything due to drafting off of other cars in the race. Also, the only thing the FIA would be concerned with is Sport mode.
Yes, that's what DLC is for.
