Ray tracing simply isn't worth it on GPU's with current day architectures. Five or ten years from now with completely different designs maybe, but not now. Only my opinion of course.

Dead Space was a great game, I certainly enjoyed it, but why a remake and not a prequel or a brand new game.
It looks okay for what it is -an arcade style shooter, but it could have been so much more. I imagine this game will become extremely repetitive after a while like World war Z, et al. But we will see.

Think of steam deck as a PC Valve say- Yes, a very low end PC. A 1.6TF PC with a medium level/low level CPU. All these people saying ah well, you know what, It's a PC so you can adjust it to get 60fps! Get out of here. If you want one great, but stop making out that somehow 30fps @ 720p is now acceptable. Yeah,looks impressive, but I'll be convinced only when I see a game running with this kind of graphics. We have all heard the hype, and seen the tech demos, but I haven't seen a game on either next gen machine that clearly states 'next gen.' And remember, I'm not the one producing the hype.
This isn't a new concept. As long as the refresh rate is an exact multiple of the frame rate you will get smooth game play. However, the game does need to be coded for that specific frame rate otherwise really all you are doing is creating a smoother experience, not a faster one.
I'm saying this with only partial sarcasm. The storage may not be the only regret!
Actually, I think you have a point, at least for the short term. Many PC's are still running there games from old mechanical drives, so even the cheaper model should manage. Though in 6-12 months, partially due to the new consoles, NVMe SSD, or at the very least SATA SSD, will become mandatory for newer games. At that point you may need to upgrade the storage, if that turns out to be possible.
I mean okay, eMMC (PCIe ver1 x1) & Micro SD probably aren't going to be optimal. And the price hike from the lower end to the top models to get the PCIe v3 X4 NVMe is quite a lot. This really doesn't sound like a value proposition to me. Especially when you can get a Series X|S or PS5 for less. But yeah, I know it's portable, even so...
It's seems you may well be correct. Personally, I can't get my head around playing on a tiny screen at less than optimal graphics. I do own a switch - purely for the first party, but I can honestly say I've never once played it undocked. And while the switch doesn't compare to the power of Steam Deck, I'd say it's a very different proposition.
Well maybe I'm naive, but I really didn't think people like you existed. Fair enough. I just don't see the specs being sufficient to really give you the kind of experience you're used to on PC. Lets hope I'm incorrect.

Though that isn't relevant, because you won't be playing Nintendo games, you'll be trying to play PC games designed for relatively high powered PC's on a platform incapable of keeping up with even last gen consoles. Yes, it's a nice new product. Yes, it's flexible and sounds great. But it simply won't be able to deliver the performance. The only people I can see this really appealing to is the 'Gadget brigade.' Personally, I thought $7.5 billion was way too much for any games company, but paying $70 billion when the world is the way it is, absolutely astonishes me.
