Puzzle & dragons and Monster strike are kinda big there on Mobile. Kantai collection (a.k.a Kancolle) and few others are pretty big on PC.
Generally games where you collect cards/characters from virtual gatcha machine to use in the actual game. These characters are mostly cute anime girls and some people are willing to pay thousands of dollars to obtain the rarest ones.

Consoles are closed hardware, which means you can't just install whatever you want to them or modify them as you please.
They tend to do this to protect consumers from themselves and retain some control over their system. More people working on project or part of the project isn't necessarily better nor does it directly translate to stuff getting done faster. Lower headcount means easier management and generally the team is more agile.
I would blame this more on the Q.A department or the publishers for releasing the game before it was ready.

8th generation system without proper 3rd party support is a dead system. You'd have to have like way way way more Big first party studios than Sony to carry the system and with the current game budgets that's just economically unrealistic.
Even Ps4 is covering some caps with high profile indie games.

You are simply asking for impossible.
Even Nintendo themselves struggled to make enough content for Wii U. Development was taking a lot more time and probably costing a lot more money as well.
You simply can't expect 3rd party developers to just ignore everything else and start making unique games for a platform that is nothing like the others. It just doesn't make any sense.
Because Nintendo is simply unable to deliver them at the quality and speed they would want to. Development costs and time of HD era of games caught them by complete surprise.
They can carry system like 3ds with their own games alone, but not so for Ps3/X360 level consoles. Oh and the new generation wont be any easier.
Downloaded this last weekend, handy little app this one. Was expecting something a lot worse but the interface seems nearly as fluid and fast as PS4 one.
Microsoft and Sony have done a lot more than given the developers strong hardware to work on.

Who gives a damn about exclusives, people want games and good games at that.
Xbox One and Playstation 4 both have ton of games that are simply unavailable on Nintendo platforms or if they are the versions are strictly inferior to their PS4/XO versions.
Sony and Microsoft both have their nice exclusive line-up, but those are only to strengthen the already great 3rd party line-ups.
What you are missing here is the fact that Sony is dominating the console market in West and Japan. Handhelds are secondary market for them. Mobile boom is actually hurting Nintendo a lot more than it's Sony.

You do understand that Shenmue 3 and FF7 Remake are like Half life 3 for a lot of people. Sequel and remake for games that have achieved more or less a legendary status among gamers.

Majority of western developers tend to focus on mobile platforms (iOS, Android, WP8+) so they don't really give a damn about handheld platforms.
IF you don't want to play Japanese games, don't buy a handheld.
Nintendo is starting to face the harsh reality where they alone simply can't keep the console a float. Sure developing for 3DS is still cheap and relatively fast but Ps4/XB1 generation is completely different story when it comes to big budget games.
Sure they make great games but 2-5 great games a year for a system just isn't enough these days. Not when competition is swimming 3rd party games.
