They will keep updating it for as long as enough people pay for those updates. Even when the devs and artists do get sick of it, they won't be allowed to stop.

That's true Palitera, but with Xbox Live the servers are always relatively local. That's the best thing about it from a player point of view, and the reason "dedicated servers are not new and anyone can use them" doesn't really hold up as a counterpoint.
P2P can still be better for perhaps a 2 player online game in the right circumstances, but otherwise the "power of the cloud" is as good as it's going to get.
@Gamedev1 Call of Duty is not a Sony first party game.
Besides, if DriveClub is any indication of Sony's server performance then P2P might be the better option anyway.

Curious to know whether players in the EU are actually connected to servers in the EU, or if we're all going to long-haul to the U S of A.
It seems unlikely that there would be too many connections in all regions at all hours of the day.

Unlikely. The 360 is not capable of the wireless tech on the new controller, so any compatibility would need you to plug the controller in. I doubt they will bother working on an update that would basically be a step backwards to most people.
Having said that, I am holding on to an unlikely hope that they release a wireless dongle for the PC and I suppose if that happened they could add support for that dongle on the 360. Very slim chance though!

Let's clarify another misconception, dedicated servers are not limited to simplistic multiplayer game hosting. With a good dedicated server available you could do things like offload AI, maybe physics. Any non-immediate computational requirements would be well-suited to run on dedicated servers.
Now put it all together: Microsoft's Azure cloud can host dedicated servers. Dedicated servers can do the things ...

By the same token, for a football game it is very easy to design a mode that caters for people with less time. Those people play exhibition modes or mini-tournaments, and there is no reason any part of a football game should be locked out of those modes. Except greed.
If a designer genuinely believes there is some demand for a more in-depth "season" style...
