I think the problem is Wii U:s CPU.
Frostbite tends to run single player very well with bad/low performance CPU. But once you run multi player it really needs the CPU aswell.
(In Frostbite 3 the left over CPU cycles in single player could be used for AI.)
Wii U actually has less CPU than XBOX 360 and PS3. I do not think any developer expected that when creating a Next generation game engine... (bad choice Nintendo)

Demos are rarely played in 'difficult/hard' setting.
But as it looks now I agree...
Usually it is not a problem using more memory, the game will be able to cache more.
I suspect there will be launch games will have more than 8 GB of 'level' data.

I think you take real world environments for granted...
Take a look at the environment in this part of BF3.
- people
- animals
- wires
- vehicles/traffic (including as light sources)
- trees (that moves in the wind)
- litter, chairs, ... (non gameplay related stuff)
- and later other forms of vegetation

Games have been written for what is common out there. Thus very few games utilizes AMD Bulldozer. But with PS4 this will change - suddenly an 8 core CPU will be one...
Guess why Sony did not announce a price?
Because now they can read this and other treads before they set the price...
They use custom chip for CPU+GPU it is not the chip themselves that are expensive - its the engineering time put into constructing them.
If Sony can postpone reclaiming that money (and for a console they kind of can - much longer life than any normal CPU or Graphic chip)

You just can't add bigger and bigger textures, takes time to produce them, time to load, ... and also time to make.
I really think you want procedural grass! Imagine grass as a fractal when zooming in you get more and more detail.
Calculating a texture takes CPU/GPU cycles and a fast memory. Not necessarily a lot since you calculate the parts that are needed.
Result? Designer says - this area ...

Sounds like the 12GB flash memory is an internal SSD. But it is so small that one onder if it is integrated on the motherboard...
Done right this could be used as a fast cache, done wrong it would be slower then the current SATA HDs...

With better hardware small indie houses can more easily make something that looks decent.
You can use your own style - nothing prevents you from releasing a game with blocky graphics on a HD console.
Take a look at Minecraft...
It would have been a lot more difficult to target the performance of PS3 or Xbox360 from the beginning - both have less memory then recommended.
Note: OneAboveAll specifically mentioned Battlefield...
Battlefield is a lot more challenging than your examples.
a) destructive environment - not only buildings but also ground
b) ground vehicles - you know how it should look like! (futuristic flying vehicles might fly like in Planet side 2)
It is all about state, how much info needs to be transmitted for each player (and to how many of the other players), how much changing environmental stat...
