That was probably a good idea, because Nintendo has always dominated the handheld market and the investors were running scared when that changed. As long as their handhelds are doing OK Nintendo is doing OK.

Most Wii U games are the definitive version, even if just for the off-tv play. People are too concerned about the graphics of things.
The gamepad doesn't do much in either game. Just having it on and running the map uses an amount of power. I doubt dropping things such as the gadget swapping etc makes a big difference to performance, if any at all.

Project Cars is the Wii U version of GT5. Yes, it's multiplatform, but it looks better on the Wii U than on the PS3.
If by the diluted game you mean Mario, a 3D mario main-series entry comes once or twice a generation. CoD comes once a year, AC once a year, there have been 3 uncharted's on the PS3, lots of Halo's on the 360 lots of GT games. And Mario adds new gameplay features with every game that make it look, perform, or feel different.

Everyone is saying that Nintendo are stupid for not including online in this game, but what would they be saying if this was a Sony game that wasn't focusing on online? Everyone would try to spin it as Sony knowing that it wouldn't work, and how Sony knows not to waste their resources on online for a game that doesn't need it.
But because it's Nintendo it must be a stupid move.
Why the disagrees, though? Mario Kart has had good online since the DS, as deafdani said, and there's no reason why Mario Kart 8 would be an exception to that.
With Mario Kart it might be.
There have been less main-series Mario games since the Gamecube than there have been COD games this gen.

And MK 8 and SSB and X, my wallet is already crying.
The thing is, the Wii U gamepad is always going to be better than PSVITA and SmartGlass due to the zero lag and the fact that everyone with a Wii U has one.
The VITA has very little owners, so it won't be used as a major part in any games.
And SmartGlass, although it uses phones which pretty much everyone has, has got bad lag that won't make it viable for fast paced gaming.
