Honestly, while I agree with the popular notion that Eternal Darkness should be remade due to how criminally underrated it is, most of the games on this list would probably just benefit from having a new version made. Star Fox Adventures? How about just a new Star Fox? Four Swords Adventures?? Why would that be a remake candidate? You can't remake the GBA integration. Harvest Moon? Stardew Valley exists.
Lucasarts and the Star Wars license is so broken up, I doubt RS2 will get remade any time soon. Sucks, because it's legitimately like a Top 5 Gamecube game. And instead of remaking F-Zero GX, how about just a new F-Zero?

Shit, they could do a "Gamecube Classics" branded line of switch remasters to take care of any marketing blindspots in trying to pitch a 20+ year old innovative horror game to 2023 audiences.

FFX really shines in the endgame. The Blitzball, the arena, the Dark Aeons, Nemesis, Omega Weapon, Penance, etc. I mean, it's fantastic from start to finish imo, but more pertinently is the overworld feature the true metric by which exploration is measured?
