Hopefully the M.2 port will be enabled soon. I have read that Sony will do this in July/August this year but I am not holding my breath.
Eldon Ring like many games developed by "FromSoftware Inc" (ie: "King's Field" all the way to "Dark Souls 3" and "Sekiro: Shadows Die Twice") is going to be a challenging (this is subjective) game. Personally I do hope there will be considerably more randomness in the new game.
Of course you don't really appreciate enemy randomness in a game until you replay the game.
Unfortunately the FF7 remake for the PS4 is about 90GB (no idea what it would be for the PS5) so you want at least that amount of storage before you play it.
So far PS5 are difficult to come by in Australia (scalpers I extend my middle finger) but even if I can get a PS5 at retail the M.2 storage bay is not active, although it is supposed to be enabled come July this year.

If you have a PS+ account (at least in the Pacific/Asia area - includes Australia/New Zealand) the game was free. The trouble is the game is 90GB in size so you really do need the M.2 expansion enabled if you have a PS5. Even if I want to play it on my PS4 I will need to setup a 1TB or more Hard Disk Drive (or more expensive and not justified SSD) since I am close to filling up my 1TB HDD on my PS4.

I hope to have a PS5 (disc version) before the game comes out. Still you can get many PS4 games that have a "free PS5" upgrade. Horizon Zero Dawn + Frozen Wilds and of course Forbidden West are no exceptions.

The PS4pro and (of course) the PS5 can display at 4K although all PS4's can display HDR if the game supports it and your display can interpret it.
Unfortunately some HDR 4K TV's may not be able to interpolate a HDR enabled game from a PS4. My LG 31.5in (80cm) HDR 4K monitor does display HDR enabled games properly from my PS4 (base model). Later I will definitely get a PS5 but unfortunately they are low in stock where I live and I refuse to pay a scalper.

The so called dinosaurs are machines but they are based on creatures that existed tens of millions of years ago (ie. Terror birds) and even a few thousand years ago (ie. Mammoths). Of course Pterodactyl (the mechanical flying creatures called Glint Hawks) are not dinosaurs since they existed over 200 million years ago.

The PS4 and I assume the PS5 allows you to suspend pretty much any game by placing the machine on standby (you need to configure this), however, it may be annoying for some to play for an hour or more and die which requires you the player to restart from your last save.
For some games (NioH for example) putting the game into standby will work (loading is very fast) but if the game has online features you may need to be next to a save point (ie. in NioH's case a shrine) ...
Wow, this game brings back memories. I still have the original game (April 2010), however, the graphics while acceptable although they do have a washed-out appearance are IMHO not nearly as good as many earlier PS3 games (for example Demon Souls - Feb 2009 and Final Fantasy 13 - Dec 2009).
Note: I am only comparing graphics, not gameplay. NieR gameplay was IMO acceptable.
I am not aware of any Souls/Bourn game that has health auto regeneration by default. Games like The Witcher 3 has an attribute that you can select fairly early in the game called "Gormate" (essential if you select the higher difficulties) which will allow auto-generation of health for 20 minutes if you eat 50 or 80 points per second food. I normally play NioH 1 using the kusarigama as my primary weapon with the katana or twin swords as my secondary weapons. On rare occasions, I do use the spear and or axe/hammer, however, when fighting a human or especially a grave summon I prefer the kusarigama since I can yank the person to me and rapidly pummel them.

Actually, NioH (I have not played NioH 2 yet) is a mission-based game although it does have Souls-like features and like "rdgneoz3" says it is much faster paced although fighting speed depends on your weapon, "stance" and "Ki" which is equivalent to stamina in Souls games.

If you are in the market for a TV then 4K (preferably with HDR) is the way to go since the difference in price compared to a 1080p TV is fairly minimal. Of course, if you have a PC and are an avid gamer you would most likely have a 1440p* monitor although 4K and even 8K HDR monitors are also available.

All Souls games have a stamina bar which allows the player to manage how they attack and defend so when levelling a player should donate points to this attribute.
If you play NioH you will notice that you don't have a stamina bar but a "Ki" bar (donate points to "Heart"), however, you can employ a technique called a "Ki pulse" which rapidly replenishes your Ki and this is essential when fighting powerful enemies.
I found that the only way to play TW3 is on the highest difficulty since that basically forces (err. coerces) you to make use of all the Witcher resources such as weapons and armour as well as spells, oils and other buffs.
IMHO playing on easier difficulties makes for a hack fest.
Dark Souls and Dark Souls II: Scholar of the First Sin for the PS4 run at 60 fps and I have never seen stuttering. Even Dark Souls 3 (PS4) which is capped at 30 fps is definitely playable and I have rarely seen stuttering.
If you want to play a Souls-like game that allows the player to rapidly attack and dodge play NioH and equip twin swords although my favourite weapon was the kusarigama which allowed to raise and beat revenants that were sometimes 20 to 30 levels above me...
I enabled all the DLC prior to starting Skyrim and a few hours later regretted doing that. Yes getting pummelled by vampires early in the game gets frustrating really quickly. I found that it was better to restart the game but this time to enable the Dragonborn DLC only since that seemed to (at least to me) integrate much better with the main game. Still I enjoyed playing Skyrim and spent well over a 200 hours on the game.
