All this video is is people, not the main character so much, talking about stuff and a tiny bit of gameplay. It's the opening cinematic, but there's not much as far as the story is concerned. It's similar to GTA4's opening: stuff happens, but none of it really applies to the main story.
At least this video was a decent quality. The last one was garbage. It looks pretty good.

It depends on the kind of "horse". I read somewhere that donkeys can't jump anything and there are different levels of horses. Like there are sickly horses and then there are bad ass horses. But that might just be for multiplayer, but it stands to reason that the same would apply to single player. Also, I think the condition of the horse matters too.
