I think there is a big difference in the statement graphics don't matter when it is barely noticeable at all in many games where people argued for or against it. For example, all those stop frame comparisons that have been done comparing PS4, Xbox and PC versions. In most cases it is barely discernable at that level, and even not noticeable at all playing a game a full speed. Compare that to experiencing the original game (like DC) and noticing right away a drop in the graphics fidelity...
But, to your point that is what a review is in the first place. One persons experience. However, if that experience is repeated in multiple reviews we tend to see it as a trend no? This is no different then saying a story is bland or a myriad of other reasons a reviewer did not like a game. It is all subjective. We take that review or reviews and weigh it against our own values and expectations.

@Obscure_Observer Pricing seems about right. I do believe Microsoft should also bring out a base version that gets the price down to around $399. That would be a digital only version (no playback drive cuts $50+ out and 1Tb instead of 2TB cuts another $50). That would allow them to sell it below your expected cost. Plus it pushes digital purchases, which both Microsoft and Sony prefer anyways (more money for them).
