A tiny little closed off game scene like that (without a level that is literally 10 square km in size for example) should look WAY better then that. This could have easily been done on Unreal 3 engine even. Basic water reflection effect, static looking vegetation everywhere, static expressionless face, not even a blink or eyes even looking at what the human is supposed to be looking at in their hands.
There aren't even super advanced 7 year old UE3 effects being used here let alo...

Even if you have a 2007 Full HD TV, you should get Scorpio over the other 2 Xbone consoles. Like you say, its a no brainer but you neglected to mention that getting a Scorpio is a must for every single current Xbone owner out there, no matter what revision or model it is you have, even your less than a year old S.

A Spyro remaster would be built from the ground up which isn't really Bluepoint's thing. They are the masters at porting over big budget, complex games of their time for current consoles.

Just Platinumed the game there today after going back to it after finishing Horizon. 188 hours it took. What an experience. The visuals, the animations, the music, the characters all brilliant.

So now a NEW standard for console hardware = GDDR5 and being able to get great use out of a 2007 1080p TV. Of course, being below that standard for almost 4 years was "not a big deal".
