Damn I almost forgot about the SOTC one. Having to jump off your horse and grab its wing was insane.
Any given Metal Gear, Devil May cry and God of War bosses would have made my list but also I like the ones from the Jak games, not as epic but just fun as hell.
For me you can narrow that list down to just three. Twisted Metal, FFVII (since i never finished it), and holy crap we need Legacy of Kain for sure. Raziel and Kain are badass.

What an awesome way to implement the traditional "torture" , tap the triangle button like a madman, sequence. Only this time, Snake purposely puts himself through it. One of t greatest (and most exhausting) game moments ever.
