FF7R is not going to be on Xbox One.
After the first year, every single game from SE Japan has been PS exclusive (DQ, DQB, Nier, I am Setsuna and a few others). From what I know, if they could reverse KH3 being on Xbox One they would. Which makes sense considering all the extra games releasing around KH are PS exclusive.

Just because he's dead doesn't mean he can't be a part of the story telling and gameplay elements. You could play flashback's leading up to his death, while also playing current events with Ellie losing her mind.
One thing is for sure, regardless ND should have earned your trust enough to believe that they know what they're doing.

Joel and Ellie are legendary, it was always going to be them.
Companies usually have a budget. If the margin tips in one area (console pricing) it will be recovered in another (game development). That is why they are selling the Xbox One so cheap, they are producing very little in house software. Since the software is selling only decently, I can't imagine they are turning much of a profit with the division.

The Last Of Us 2 is not in preproduction. Everything was set quite a while ago, they have been building it since.
They have been primarily showing it in Japan, but it's coming here aswell.
