The biggest barrier right now for 3D gaming are the glasses. They are still insanely expensive.
3D gaming won't become mainstream until those costs go down and 3D TV content is more readily available.
There is so little watchable 3D content right now it's only the early adopters buying these sets and glasses.

The Xbox360 and PS3 cannot render those type of effects with graphics like Uncharted 3 or Gears 3.
There has to be trade offs...
Either great graphics and linear game play with little to no interaction with the games surroundings OR Interactive environmental damage and larger maps with average graphics.
Consoles at this stage cannot have it all.
1080p gaming with those features is especially not possible.

Anyways. The reality is these consoles CAN run this game, however like all PC games ported to consoles the game would be gimped in many ways and this developer won't go in that direction. Which IMO is a great thing.
Until 3DTV capable sets and glasses become affordable for the masses, 3D gaming and TV will not take off as they hope for.
As of now, there is not that much content for 3DTV for viewing entertainment.
3D gaming for consoles (not PC) is also limited as of now.
3D gaming will take off IMO next generation when these consoles can actually do it properly

Almost every single PC game that is also on these consoles can cost anywhere from $5-$20 less than the very same console game.
That price gets even cheaper when STEAM has those weekend fire sales for some Triple A games.

Yes and even if it wee exclusive to the PS3 it would still run in 720p or less with low resolution textures and not nearly the level of shader effects and HDR/lighting/Soft Shadows etc and real time effects as the PC.
