It will not be on PS, it is a console exclusive to Xbox platforms only. Same with the The Medium that game won't be on PS as well.
No you haven't seen what it can do on PS5, all you saw was scripted movement with no AI or RT. So until you've see actual games and not a PR sales pitch then you can claim you've seen the PS5!
It's called Marketing and Sony paid more for this. Epic had a lot to gain from Sony over MS this time.
1. MS already uses U4 tech on all their development studios so, MS is likely to use U5 anyway!
2. Sony uses inhouse engines mostly so, gaining Sony Studios is a win for Epic because now they can claim "a world class engine that powers both Sony and MS consoles!" See how nice that sounds when Sony is added to MS as developers using one engine.

Sony is being so cagey because they know MS has a arsenal of games that have been in development for at least 4 years. Two years ago Phil mentioned many signed deals and many games that were ready to be shown but, they chose to keep them under raps! Sony has every right to be cagey. Four years of development time is a long time in gaming space! They probably don't know what think? MS is about to take away the last bullet Sony has used against MS the games. Well the games are coming...
