I believe they also simplified the controls and removed the "pro" flight controls that had sixaxis support. Someone who mastered that kind of flight just dominated...

Different teams, different projects. The beta is being updated. It's a beta, NOT a demo. That's what they are meant for, to find server issues. The beta has already improved over the past few patches.
As for adding Trophies to old titles... why bother, when programmers and QA are tied up with R3, RCF3, and Overstrike? Do you really need some trinket to encourage you to replay a title?
Development would be done primarily on the PC.
