The should at least announce that they are working on PS Now for PS5. There is no reason to not have the service up to date with their latest console. I can understand the streaming restrictions, but downloads should be PS5 versions.
Why shouldn't it get attention? PS5 just came out and PS Now should transition to the new gen already. When a new highly acclaimed exclusive comes out no one hesitates to discuss it positively (rightfully so), but when it's something negative people can't? You can't get pissy just because people are discussing it and it rattles you.
Never understood why they stopped making demos in the first place. So many games are impossible to try without buying. It should be an industry standard imo.

Perhaps it didn't entice you in a way that you wanted to understand more, nothing wrong with that. The story is supposed to be mysterious and not straight forward, it's best understood by actually investigating and analyzing what is happening and reading up on the things you find throughout.
It doesn't mean the future of storytelling has to follow this exact same mystery pattern, it just means doing more unconventional storytelling and doing things that games do...
It probably has to do with playability. It's possible that the new version is improved in many ways but is not in a state they can show because it's full of bugs and technical issues, so they showed the latest playable version. If that's the case then it's respectable because many devs now days will show an unrealistic promotion demo that doesn't represent the actual product.

Graphics, physics, animation, all add to the tension and would only improve what they are trying to portray. Right now what they are trying to portray is hindered by the fact that it looks a bit dated. What they are doing other than graphics is great, but in this day and age there's no excuse for graphics like these from a decent sized studio.
