Skyrim for the PS4 and XB1 includes the three DLC's as well as some modding capability. Not including the DLC in the Switches version of Skyrim would be a real slap in the face for people wanting to play this game on the Switch.
You are quite right people will buy the Switch although if there are shortages many people will loose faith in Nintendo and may decide to spend their money on something else especially if scalpers get hold of some stock. The impatient Nintendo faithful may pay a scalper but most people won't especially since Christmas will be nine months away.
If you have looked at the advertisements for the Switch you won't see any kids. Basically, the Switch is targeted at older teens and adults
Let's put it this way if you are a parent would you purchase the Switch for your child? If you would then would you let your child take the tablet out of the house? If you do trust your child then good for you but would you trust your child's friends?

Without seeing the specs I would assume the Switch's bus would be SATA3 (6Mb/sec) or an equivalent so to make efficient use of the internal memory I also assume it would have the same speeds of a Solid State Disk which are in the order of 500MB/sec read and 480MB/sec write.

The part that the game is on is actually a cartridge or SD card not the main 32GB storage. What the 32GB fixed storage will have is the operating system, game saves and DRM control.
You should realize that you can display the screen on some smartphones to your HDTV. https://www.verizonwireless... and considering many current smartphones have 1080p displays the output will be a 1:1 equivalent. You can also stream wirelessly (ie. DLNA) if your TV support this or via HDMI cable.
Actually, 32 GB of storage is fine if all you have on it is the operating system, game saves and DRM codes associated with each game which can reside on external media. If you can use SD cards for external media then to get the best performance you would have to consider class 10 cards which can be quite expensive although not as expensive as proprietary cards.

Whether it will continue to sell well after the first couple of months will depend on third party support and not just "me too" ports of games that are already on the other consoles. Of course, you will always have the first party games such as "Mario", "Pokemon", "cart and smash games" with a sprinkling of Metroi...
I would not call Skyrim a "kiddy" game and it is confirmed to be ported (don't know when) to the Switch. Even if you look at some of the Gamecube games there were quite a few that I could not classify as "kiddy" and those games could easily be ported to the Switch with better resolution and gameplay enhancements.
I personally will not be getting the Switch day one because I don't mind waiting and I don't really care for the portability aspect...

Game sizes depend on many factors such as voice files, video files, game data files and even the game itself. For the PS4 you can get games as small as a few hundred MB to over 50GB. It is very difficult to quantify this unless you can look at games sizes of a game for different platforms and even then you have to ask if anything as been added or left out.

There is a very good reason why games on the PS4 and XB1 are installed on the hard disk drive. If you wish to look at the performance of a HDD @ 5400rpm you can get read speeds (ie loading times) of approximately 80 to 100MB/sec with 7200rpm drives about 20% faster and hybrid drive much faster again.

Buying a cheap SD card may save you money but you may find that performance can vary dramatically over brands and class, so do your research before buying and as a rule of thumb, I would be looking at cards that have a read speed of around 80 plus MB/sec.
The PS4pro has a RRP of $559 AUD which is $89.05 AUD more expensive.
Unless you want the Nintendo Switch for its portability features and Nintendo games the PS4pro is the better value for the money since it is much more powerful, can display games up to 4K (natively for some and rendered for others) has 8GB GDDR5 memory (4.2Tflops), 1GB DDR memory, SATA3 bus (up to 600MB/sec throughput), HD Bluray player and a 1TB user replaceable HDD.

The Nintendo Switch will sell and sell well for at least the first year and if third-party developers come up with new IP not ports of games that are already available for the PS4 and XB1. Without third party support the Switch will probably go the same way as the WiiU although the faithful will buy and defend it.
