Too many devs these days are trusting in sepia tone art and works for them with some genres but it gets kinda samey.
Nintendo games stand out visually because of the use of vibrant colors and makes their worlds much more inviting and ages far better than most games that goes for realism.

Licensing issues is whats preventing them .
