If Battlefront 2 can do 4k 60 on the X there's no reason this shouldn't be able to. They should do 4K 60 for all content that isn't crucible.
It will most likely look identical to those, since sports games are still being made for last gen systems.

Don't get your hopes up. Games were made with 4K assets starting with GOW:UE. This was well before that and the amount of gamers that still play it doesn't make it worth the extra time.
They need to allow non subscribers to see which games are included on the pass if they aren't already going to. A partnership with EA Access as an add on for an additional $2 a month and a complete 12 months plan should also be a thing.
The Switch is a handheld first. They're not going to allow something that requires online.
Maybe they should stop treating their customers like their personal atms.
