I agree, the current method of making conversation AI is broken. If you're interested, check out semantic networks. I think they hold the best hope for creating intelligent entities by actually storing a base of knowledge from which a computer can draw from.
Yeah, currently it only takes me about 2-3 sentences to blatantly show that a chatbot is a computer (and I've looked for better ones too). I'd like to see how well this AI does.
The only thing they could demo would be the story levels, which takes away from the draw of the game. If they include the Create mode or user-created levels, there's no reason to buy the game.
I agree. Don't forget about Linger in Shadows and Eye of Judgment. I think more than Nintendo and Microsoft, Sony is willing to take chances with creative titles even if they only target a niche audience and may not sell very well (or even just fail as a game outright).

Only Ico and Shadow of the Colossus have conveyed emotion using the video game as the medium, and not the text. There has been no other large-scale game that has done that yet. Zelda is no exception, especially with its shallow characters and happy-go-lucky good vs. evil themes. Not to mention the story is always the same.

Not all 8-bit RPGs are like that. You need to play Final Fantasy VI. Some of the best characters in an RPG there, with few cliches.
This would have to be implemented by the developer, not Sony. The developer would have to decide if they want to use up some RAM and processing power to display the video.
Well Midna may be the first major character in a first party Nintendo game that actually has character and isn't just a mascot, so you should give them some credit.
