Kinect connects to a computer or 360 via usb, and all the software is out there with step by step instructions. The end user who wants to use these mods need have no prior knowledge of creating software at all, so I don't see how accessibility is an issue.
As to your question of usefulness - if one person finds a mod useful, then it's useful. I understand what you're saying about how many people actually use these mods - but I think you can be pretty certain that ...

I sort of disagree actually, I think it's the other way around. I mean, why would an experienced guitarist play this game when they can just jam with their band or chuck a cd on, learn it by ear, and play along to that if that's what they're into?
I think this COULD be a great tool for beginning guitarists who are struggling to learn in the more traditional way, and who would maybe benefit from a more fun, intuitive approach to learning.
