The last Spyro game was published by Activision. Insomniac Games has not been involved with the series since Spyro: Year of the Dragon back in 2000.
The sales are very likely to be increased by virtue of the fact that more people have access to the game, but there is no empirical evidence to suggest that sales are going to be "at least double".
That being said, I congratulate Xbox 360 owners. Insomniac is a terrific developer. I am glad they at least went with EA instead of Activision though.
