Three things that can be crucial in remote play outside the LAN. These aren't neccisarly required but if you run itno issues like you are describing, they are more than likely the solution.
First thing would be to connect it via ethernet (if it isn't already).

No problemo. There are a lot of great games on the Vita that make it purchase worthy even without remote play. Tearaway, Killzone Mercenary, Gravity Rush, Gucamelee!, Hotline Miami, Rayman Origins/Legends, etc. (those last few aren't Vita exclusive but damn if they don't go hand in hand perfectly with the Vita).

In regards to using it with a PS4 DS4, it could sound a tad bit better (if you want to become a audiophile and get extremely technical) but that's not the headsets fault, that's the software pushing the audio into headset. The average user won't notice that though.

First and foremost I want it to be known that the disagree did not come from me.
As I said in the comment below, usually when you see a headset advertised as "7.1" or "5.1" it's usually extremely overpriced for what it is.
The quality of the actual drivers in the headphones are much more important than 7.1 or 5.1 surround sound. The software pushing the audio should take care of the immersiveness.
I use the SteelSeries Siberia V2 headset with my DS4 fine (microphone included). it also works with my Vita fine. Just needs a mic and headset dual female adapter to a single male adapter thats ~$5
I would highly suggest that headset. It's really badass. Probably the best thing about them is the simple fact that they don't look like goofy gaming headsets but a legit music headset so you can wear them in public. The mic even retracts right into the headset.

Being a PC gamer and seeing Uplay and Origin both forced down my throat, they are pretty close to being equal evils in my mind.

As a PC gamer I really thought hard about the Nvidia Shield but I ultimately decided on the Vita because of many factors, remote play being one of the major ones.
On the Shield you can't remote play outside your local LAN.
Yet on my Vita I just got to check out remote play from over 500 miles away and it still is playable, with the PS4 on a mere 1mpbs upload speed none the less...

Still I don't think you realize how much influence a publisher has in the development process.
Take Battlefield 4 and EA for example.

I will admit that a controller is a excellent compliment to a console. It's perfect to just sit back and play with on the couch.
If you are accustomed to a mouse/keyboard though, the analog sticks will drive you freaking nuts in some games, FPS being one of the big ones.
