Not necessarily endless pockets. It's just extra large pockets and a light speed weapon/item delivery system that let him swap them on the flying while pausing time.
Endless pockets means you wouldn't have to swap, but scrolling through them would be a problem lol...

It's pretty similar to the buddist looking boss in the NG2 demo. Except the boss in the demo is actually more bada$$.

perhaps they don't want to make the demo too hard. Yea was there a "normal" difficulty instead of easy?
For example, I couldn't get into Resistance 1 demo as it was too difficult for me.
It also depends on which section of the game they demo, as the beginning section of games tend to be easier.
