In it's current state, eFootball is nothing more than unmitigated disaster, choke full of bugs, beyond poor animations and some truly atrocious player models. FH5's visuals comfortably match what we've seen of GT7, and in an open world racer no less.
Prioritising the 60fps it's of far more importance in this case if the PS5 is not powerful enough to do both. Perhaps GT8 on PS6 will do both..
