Your problem is you are not thinking of the children. Children can play safely with people using Playstations, PCs, iPhones, Android phones, or basically anything. But NOT filthy Xbox owners. That'd be awful.

Play it. You definitely feel the waves as you sail, and while I wouldn't say it feels "realistic" (I've never steered a large boat tbh), it certainly feels "right" for the game.

Could be both. Freesync may be enabled at the hardware level, but rendered completely ineffectual by the v-sync implementation within a game.
Hopefully games start doing both. A proper locked and stable v-sync implementation for the majority, with the capability to unlock it when VRR is available, allowing higher framerates without introducing tearing.
Stylised graphics can scale down to look and run well on a low-specced machine, and still stand up on powerful machines of today and tomorrow.
Sea of Thieves looks really nice on a base Xbox One, and it will still look nice on a 2080Ti. That's harder to achieve with realistic graphics.

If they announce stuff further down the pipeline then it might get Scalebounded, or Fable Legended, or Phantom Dusted. They should stick to the short term for announcements, but make sure they actually do have stuff in the pipeline.
And to be honest, Sony should probably rein it in a bit too in that regard. Shenmue 3 and Final Fantasy 7 reveals were really premature.
He normally talks about "biggest", "greatest", or "best ever". I think this is the first one that he's said will be "different". In that context I wouldn't expect much!
