Everything sells out at launch because there are always a few million dedicated fans who are willing to pay any price for latest hardware from their favorite company. Secondly, the supply is very limited. They say sold out but never tell if they sold 5 units or 50,000 units. Announcing and releasing are two separate things. Let us see how many of those actually materialize in the first year. Remember how long it took for Xenoblade Chronicles X, Bayonetta 2, SMTxFire Emblem aka Tokyo Mirage Sessions, and LoZ: BoW to actually release on the Wii U even though they were announced and promised years ago on launch? It is really expensive given the facts like very few games to play, no packed in game, unproven network with subscription, and severely underpowered hardware. Moreover, you have to buy several accessories which are very expensive!
