I'm guilty of downplaying the Wii U specs. I've done it several times since E3 as nothing (including Nintendo first party titles) look better than this gen.
I was hoping for an improvement right off the bat. But I'm going to chill and come back to the Wii U closer to launch. I might still get one if it shows improvement over the current gen.

At this moment in time the only way I'd buy a Wii U at launch is if Colonial Marines gets fantastic ratings and looks SIGNIFICANTLY better than current gen.
Maybe Assassin's Creed.
And maybe ZombiU - although it looks awful in it's current state. Hopefully they demoed a really really really old build at E3.
Or if Wii U launched with Zelda, Mario Galaxy 3 or Metroid (that they've been developing in secret)
So what you're trying to tell me is:
Nintendo demoed a load of Nintendo First Party games that AREN'T representative of what they're going to launch with?
So Wii Fit U, Mario Bros U and Pikmin are all suddenly going to jump from 720p to 1080p, increase to 60 frames per second, the lighting is going to improve and all the textures?
Explain to me why Nintendo thought it would be a good idea to demo first party games that looked like...
I sincerely hope they were holding back.
The only indication that I saw that the Wii U looked on a par with the current gen is that one image of Batman Arkham City where the exploding tower with banners looked marginally better in the Wii U version than the PS3 version.
All the Nintendo first party games looked like upscaled Wii games. (Apart from Pikmin 3 - some of the textures were nice - although it was only running at 720p 30fps)

The thing about third parties is that they want to maximise profits.
This gen we had two similar consoles and one weak console that couldn't handle ports.
In that situation you're going to go for the majority.
PS3 and 360.
Wii had ports from last gen like RE4

I jumped to the N64, because it was a much better console. It had mip mapping, AA. Games were way better looking than the PS1 and with those better looking games came Goldeneye, Ocarina of Time, Mario64, Turok 2, Rage Wars, Banjo Kazooie (when it used to be an awesome game)

Your Mario Sunshine to Mario Galaxy is a great example of why power is important.
After Nintendo realised that the first gen Wiimote only worked as a waggle controller they scaled back on motion in their games.
All motion got used for in Galaxy was the odd shake here for firing off into space (instead of a button press) and for collecting star bits. Seriously, star bits!

People care about the Wii U's power because they're looking for a reason to upgrade from their PS3s and 360s.
We're looking for something that captures our imagination.
So far we've seen a gamepad with a screen that has been used for inventory, sniping, mini games and a few other gimmicky additions.
I'm sure Nintendo have something cool up their sleeves but WE haven't seen it yet.

Currently ALL Nintendo first party games that have been demoed are running at 720p. And ALL of them except Mario Bros Wii U run at 30fps.

I might be tempted to buy one while I'm waiting for 720 / PS4 to launch.
I like the idea of playing the Wii U on the Gamepad while the Mrs watches TV.
I normally end up playing junk on the iPad, so playing a proper core game with analogue sticks would be good.

Last gen to this gen was a big leap - Launch 360 games looked way better than last gen games.
So far the Wii U looks worse than current. Maybe that's because it has to render a second screen ... I don't know. But so far Zombi U, Pikmin 3, Wii Fit U and NSMB U all look below average for what I expect from this gen.

Yeah, maybe there will be some new cool indy games that create new and interesting experiences, maybe there'll be a marginal improvement from Uncharted 3 to the Last of Us, but if you want the Next Big FPS / RPG / Third Person adventure etc with all new shiny graphics and effects - You have to upgrade.

Graphics are not just about framerate? Look at BF3? They have bigger maps on PC. It has better destructibility.
