It isn't a remake. They released the game only a year ago, so this is just the same game on a different platform. The team just kept working on it.
Blu-ray discs have 25GB per layer, so the current discs are dual layer discs already. They have created experimental versions that have had upwards of 10 layers, but not without custom drives to be able to read them.
Let's gloss over the implied judgement about people's finances and look at your statement. It's not just the cost that's the issue, it's the value. The Xbox One costs more, and doesn't perform as well as the PS4. If the price were reduced, hopefully by removing the Kinect pack in, I would be more interested in picking one up to play Dead Rising 3 for example. But at the moment, the price point is the key barrier to early adoption.
I wouldn't be surprised if it were true, and I'm sure there are a lot of people who will be excited for this news. However, I'm still not that interested in the brand.

They've said on multiple occasions that it isn't an MMO. And multiplayer only games can be successful. Look at Titanfall.

In reality, why would a world need to be infinite? By the very definition, you will never see all of it.
They've done full playthroughs of missions on PS4 already. It's not as though this will be the only trailer they're going to release in the next two weeks, this is just one of the story trailers.
