Marvel published a brand new Carnage series a few months ago, it was pretty awesome.
Marvel also just started a new Venom series.
I suggest checking them out, the symbiotes are still in action - they're one of Marvel's biggest cash-cows.

The Hunger was a great read. The mini-series showed the struggles of being bonded with the alien symbiote. The alien needed a certain mineral to survive; the same mineral found in brains. This is the reason Venom is always threatening to eat people's brains. In The Hunger, he actually loses it and eats a guy's brain. Good stuff.
