The Native Americans and Mexicans had been included in depictions of the Old West for a long time. Black people, despite having a VERY high historical presence in the Old West, are still often not depicted in popular culture, and if/when they are it's treated as some sort of historical novelty or exception when in reality it was very common. Mel Brooks, for example, joked about this in Blazing Saddles.
They're important because they're finally being included in a setting in which they're traditionally ignored in pop culture despite having a very high historical presence.
THAT is what makes this an important inclusion, just like finally depicting Native Americans as something other than cruel/evil "savages" was an important change in this genre as well.
