I kind of disagree where you say Sony hasn't shown much of the game. They gave us a demo, a few screenshots, and a few trailers. Sure its not a lot, but its good enough to build hype for this game without revealing too much.
However, I do agree with you when you say there will be a bigger "WOW" factor

In your analysis of how long its been in development, you also fail to realize that Turn 10 has 3 times as many employees as PD does.
PD is at about 100 and Turn 10 is at about 300.
So in 2 years with 300 employees, they were able to add much better physics, better graphics, a rewind feature, more cars and more tracks from forza 1 and 2(the physics in forza 3 are 10x better than the crap physics in forza 2)

Everyone knew the gameplay would be like this. I agree that pressing R2 to walk was different, but by no means annoying. Its just not something that you're used to.
One thing that annoyed me in the demo was when the fight scene happened. I was paying more attention to which buttons to press rather than enjoying the scenario.

No, the care package glitch wasn't really fixed. Judging by the way Robert Bowling's sounds excited about the fix(through his tweets), that probably means its perfectly fixed forever, but I'm pretty sure there will be someone who posts another way to do the glitch 4 hours after the patch is released.

the lag is just stupid. You would've expected them to give us decent dedicated servers knowing how much success they would've had with this game.
in my personal opinion, pc offers more bang for the buck than the consoles because you miss out on so much detail in the console versions, but anyways:
if you have both ps3 and 360 and are deciding which platform to get it on, you're most likely not going to consider live as an extra charge since you're paying for it for other games anyway...
