I just hope No Man's Sky isn't predictable and turns out to be exactly what it looks like, a game where you wander around doing things with no purpose and all the randomly generated planets start to look similar until you get bored and stop playing the game.
How do I just buy the whole game at once?

Because corporations in general rarely listen to the public or fans. It's an inside thing working at a big company. They do things they think are gonna benefit them based on numbers. If corporations did listen to fans we'd have Half-Life 3 by now.
I haven't bought games on disc in over two years. I do digital only. I can't even imagine opening up a disc case, putting a DVD in a console. It seems quaint now to me.

Basically what they're doing is extending the availability of Xbox One games to PC to increase their audience.

I disagree with ease of use and simplicity though. Consoles have no advantage there. Steam changed all that. Using Steam on PC is like using PSN and XBL. I don't know how long it's been since you played PC games. That aspect of PC gaming changed a while ago.
Exclusives too. Did you play Uncharted and The Last of Us on PC? Nope and never will.
