I'm not sure what you mean by "gimmicks" for the Wii U. Nintendo's never promoted it's product as the most powerful system, but as an approachable and friendly console. It's not so much a gimmick as it is simply another approach to gaming.

A few of these complaints are really spot-on, but I honestly enjoyed Skyrim.
It wasn't the greatest open-world game, but it still managed to be extremely fun and worth the money.
It would be a fantastic game, that's for sure. But until Miyamoto's team really messes up a Zelda game (if ever), I'm okay with not knowing how Retro would do.

Right... which is what I mentioned by not marketing for the same groups of people. Tying the game's release closer to The Hobbit's release makes sense, but why not move all the versions to the same day?

The quote is taken out of context. "Nothing planned at this time" leaves the possibility of a future transition to the Wii U.
Right now - nothing. But the Wii U is brand new. They might, you know, be working to fix some "small" PS3 issues before working on porting to a next-generation console.
