What I don't get is why haven't they made a sandbox game where you travel around hunting down Pokemon and visit different cities and gyms -kinda like red dead redemption without guns and cowboys, but that basic idea.

Yep, that's history. It'd be inacurate to manipulate it any other way. As bad as it was, that's just the way it was. As long as we all recognise how absurd and wrong it was back then, we can reflect on, and depict history and how far we've come since. There's nothing wrong with that.
