What they were doing sounded more like it was influenced by professional wrestling, like WWE or TNA, not Mortal Kombat. Mortal Kombat is not the ONLY game to feature over-the-top martial arts moves. If you haven't played any of the previous metal gear games, then you've missed out on one of the finest playstation game franchises, and you owe it to yourself to pick at least one up. I recommend MGS3: Snake Eater, it's my personal favourite.
The character models look great; they're graphically impressive and detailed enough to be acceptable as current-gen console graphics, but cartoony enough to keep the style of the original cartoon series.

The backgrounds on the other hand... well, they look pretty poor. Then again, putting them in 3D wouldn't feel right, either. I suppose if they put some really, really nice, gorgeous artwork at insane, ultra-high-defintion resolutions, then i'd be more than happy.
