Sword skills is a must for me. I loved that in TP. More shield attack moves. More indepth fishing gameplay. More NPC development and involvement (in LBTW, I wanted to help the Coocoo lady who was taking care of the coocoo eggs). Uses for having a large wallet (LOVED the magic armor in TP for this, gave me a reason to keep my wallet fat).
More complex crafting - but don't go overboard with it. Give me a reason to fight all those field baddies 100x's over. I love...

Since the view of a game is mostly subjective, this scale will always be broken. I know people who love Skyrim to the point where they have lost their jobs over it. But to me...it's just a game that rates about a 5 on my enjoyment level. However, I love the crap out of Pikman 3, but I know it is not everyone's cup of tea. Game reviews and scores are subjective and the best we can do is follow reviews from reviewers whose taste in games are similar to our own.

Graphics...yes. Gameplay...no. I was hoping for a more AC meets Deus Ex feel to the game, instead if felt more like GTA with phone hacking abilities. Not saying this is a bad game or that I don't enjoy it by any means. However, due to the pre-release hype, I was expecting more than what it is.

Do I care for them? No. Would I buy an HD remake of a classic game I loved? Yes, but I wouldn't make demands for any HD remake.
I wouldn't play a female Link for the same reason why I wouldn't play a male Samus - because it's not the same franchise at that point. Character creation has no place in the universe of LoZ, just as it would have no place in Metroid. You want to play a game with those options, there are plenty out there. LoZ, and MANY other game franchises out there, are not one of those games.
