Actually you can, all they have done is simplify it into different stages.
instead of buying exhaust, camshafts, turbos and such, you simply upgrade the car.
on top of that, unless you have never gone into the car setting page, there is still a lot you can tune.

yup, cant turn it off, I think its specifically in there to prevent two people from buttom mashing the hell out of a single person, and also so that you have to better learn your combo deck so you know what moves will and will not hit teammates

it was put up after. prior to this the website stated the Bottles, not packaging, were in the same style of other nuka-cola products previously released (indicating the shape of the bottle as a rocket ship) with pictures of the product.
after much talk, they decided the initial product wasn't up to fallout standards and decided to ditched the rocket shaped bottle for a case it comes in, completely disregarding the actual reason people bought into...

the trick system is closer to Skate than SSX, so I would say with the tweaks and such it has more depth than SSX
all those pesky accessories took away from the game, oxygen masks, wingsuits built into snowboard suits, ice picks.
stop being so unrealistic and give us ridiculously dangerous binding that allow us to do quadruple kickflips while doing backflips off of a 50ft super pipe dammit.
some of the tutorials are even finished in the game yet, so it is still very impressive what people are able to figure out for themselves.
