Those are some valid concerns, and is a big concern for many open world games. But as long as I hear that Nintendo made a lot of cuts to the e3 demo of Zelda, then I honestly expect a lot of stuff to feel empty. Sometimes you just know it's a demo by how barebones it feels.
And I think that the story shouldn't be used as a justification, because Didn't Nintendo cut content because they didn't want the story to be spoiled?

Of course. GTA is basically in a city environment. Why wouldn't it be densely populated? It's not like you go to New York and see that it's as populated as a small town.
And in GTA V, if you leave the city and go to the more rural parts, it naturally feels "emptier."
I honestly think that some emptiness is okay. If you were to go out to the wild, it's not like you'll see an animal every ten seconds. It's not like an enemy will just run up and attack you often. If something got in your way every few seconds of the game, wouldn't you be annoyed?
I played skyrim, you don't see the animals every few seconds, and a large amount of bandits and other enemies live in colonies than the fields; what makes it worse in Zelda's case?

Actually, if you were to look around a bit, Zelda was originally delayed due to difficulty with the physics engine. Monolithsoft came to help them out with a team of a hundred people. Now the game's physics supposedly work great now.
