It's very good but in hindsight, ignoring the hype, a little long-winded. I do miss the "popcorn" element of the original 3 now that I've experienced Uncharted 4. But it is still one of the best made games of all time. Does take a little while longer to get going than the others.

Totally different experiences, so hard to say one over the other. Let me put it this way, if you loved Fallout 3 and New Vegas, Fallout 4 is exactly the same thing but with smoother shooting and crafting. If you loved previous Metal Gears, you will find MGSV to be completely different. The story, while still good, develops in a completely different manner than before, but the gameplay is better than ever. People are complaining that we don't ever seem to get AAA games. The last one was recent, NBA 2k, but it's a sports game isn't everyone's thing. Before that though, what was the last real AAA game for PS+? the general consensus is that ever since the PS4 has become popular, and PS+ has become mandatory to play online, the game being offered have been well below par, compared to what used to be offered. Sony hasn't needed to try as hard since the service is no longer option...
MGS1 wasn't totally without it's crazy parts. The cyborg ninja comes to mind, but it was definitely tones down a bit compared to the sequels. I do find MGS5 to have the weakest told narrative, but the story is for you to interpret and build as you're establishing big boss as the world's greatest soldier. I think it was intentional. It is a fantastic game though and you should try it out again. The gameplay is superb.

Are you playing the remastered version? This has the updated controls and camera that came with the subsistence version back when it came out. A clear improvement over the original.
If that is the version you're playing, can't help you. If you're having trouble with the controls practice a bit, and forget modern concepts like strafing. Give it time, it's one of the best action games you'll ever experience.
