I really enjoy the PC as a platform and the fact that I can still boot up a game from many years ago and have it scale with the hardware is an amazing concept that I'm surprised consoles manufacturers have not adopted sooner.
The way old games are being updated, modded and even improved by the community is a really positive aspect for the PC as a gaming platform.

I recently picked up a Acer Predator Triton 700 with an Nvidia GTX 1080 MAX Q Technology and so far it's powering through everything I can throw at it.
I've been really impressed with the framerates which are well over 60fps in the majority of games I've played - all on the highest settings. Older games are well over 100fps (it's got a 144hz G-Sync 1080p display which is fine for a 15 inch gaming laptop).

Played Superhot on console and thought it was fantastic - Played it recently in VR, what can I say - absolutely amazing.
If Superhot was a good experience on a TV screen the game is an incredible experience in VR.
Nothing really compares to launching ashtrays and shuriken stars at baddies in a 3D space, excellent and well deserved sales, the kind of game VR was made for.
Decent list, I agree with the Link's Awakening Remake as a clear cut winner. The diorama inspired visuals of the game though simple, look great and feel fresh.
Sekiro SDT and Astral Chain are both games with a strong art direction, Death Stranding is crazy realistic looking at times, and Yoshi's CW handicraft style world not only looks amazing, it also achieves a lot considering the limits of the hardware.
