Because it takes extra effort and attention. It's the same reason why PS3 suffered through so many god awful ports until 2009. By that time developers were taking advantage of the Cell's SPUs and finally making the PS3 sing.
By the way, eSRAM and eDRAM don't have to be very big to do alot. 32MB of either is a huge amount and really opens up the bandwidth of the CPU assuming developers actually use it.
Xenogears origins has my attention. One of my favorite PS1 titles on perhaps the greatest system for JRPGs ever.
Once developers actually take advantage of the eSRAM, I think we'll see a lot less parity. Not that there is even so much parity to begin with.

I think too many people are missing the point that I'm not comparing PS4 to Wii U. I'm comparing Ps4 and Wii U to PC.
The fact that one, PS4 and PC have a nearly identical library except for a few exclusives and two PC has it's own exclusives plus nearly unlimited backwards compatibility and emulation.
Yes Sony has amazing first party studios, but it's not enough to warrant the purchase of a PS4. At least not for at least 3 more years. For me...
And yet, Neither PS4 nor Xbone will be getting near the amount of exclusive content as the Wii U. As a primarily PC gamer, the libraries of the PS4 and Xbone offer hardly anything I don't already have access to. The Wii U on the other hand gives me a different experience from the competition and gives the hands down best exclusives period.
So... what's that about power? My PC puts all current gen consoles to shame and then some. Isn't it the unique games that are ...
