1080p will be the standard for next-gen consoles. The Wii U Zelda tech demo was running in 1080p at a smooth 60 FPS, and the PS4/Xbox 720 will probably be even more powerful than that, perhaps even future-proofed with support for resolutions up to 1920x1200.

Actually, if they use a mid to high end 6000 series card, you'd be surprised at how powerful the system would be. GPUs are much more capable on consoles where games have to be programmed specifically for them. If you were to design a game specifically for a 6800 or 6900 series card, I can almost guarantee you it would look substantially better than the higher-end PC games currently available.
If the 720 has a Radeon HD 7000 series GPU like it's rumored to, that means it will probably support DX11.1, which has native support for stereoscopic 3D.
