Characters dont really "die" when their HP goes down to 0, they just get knocked out. That's when you use the phoenix down to get them conscious again.
It's a game mechanic.
That's like asking why characters dont die after being shot numerous times in FPS games. You simply run around normal after resting a bit. Again, it's a game mechanic.

I think games like Final Fantasy are amazing BECAUSE they are linear.
It doesn't matter to me if it's linear or not as long as it serves its purpose and gives me enjoyment and fun while playing the game. Because that's the point. If it will give the player an amazing experience then it must be an amazing game. I don't know if people actually realize this but the majority of JRPGs, if not all, are labeled T (Teen) while WRPGs are labeled M (Mature). JRPGs often, if not always, feature young characters; while WRPGs have middle-aged characters.
It's quite obvious that JRPGs are targeted towards young folks---middle school kids to high school kids.

especially RPGs (but not limited to) have always been story driven. And the Best ones have always made the player emotionally attached. Western games this gen (and maybe last too) have also been critical with putting stories in their work too.
Some stories can only be told in games. Imagine if MGS came out as a movie instead of a game. Would it have had the same impact it did if it was? No. Would FFVII achieve what it has if it was a novel or anime series instead? No. Both have ...

If you want a mature storyline go pick up an RPG with a "mature" rating.
don't go pick up rpgs YOU KNOW are meant for a younger audience and go complain about it afterwards.

the reason why the japanese dialogue and the english subtitles are (most of the time) different, is because the subtitles are based on the english dialogue which was changed for the dubbers to match the mouth movement of the japanese speaking characters.
It has after story. But you have to clear all routes first to access it.
